Pretzels (GF, V)


  • 1 1/2 cups warm water
  • 1 T brown sugar
  • 1 tsp salt
  • 2 1/2 tsp active dry yeast
  • 4 1/2 cups all-purpose flour – optionally 1-1 gluten free alternative
  • 2 T oil
  • 8-10 cups water
  • 1/2 cup baking soda
  • Optional toppings of choice


  1. Whisk together the warm water, sugar, and yeast in a a medium bowl.
  2. Let stand for 5-10 minutes, or until bubbly and aromatic.
  3. Add in the flour, oil, and salt. Use a spoon to mix until combined.
  4. Turn the dough out on a board and knead for 5 – 10 minutes until smooth, adding more flour if necessary.
  5. Transfer dough to a bowl and cover with a towel. Let rest for 30 – 60 minutes, or until doubled in size.
  6. Preheat oven to 400 F. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
  7. In a large pot, combine the water and baking soda. Bring to a boil over medium-high heat.
  8. While the water solution is boiling, form the pretzels. Divide dough into about 12 equal pieces. Roll out each piece of dough into ropes, about 3/4-inch wide. Form to preferable shape. Some options include tying in knots, cutting into bites, folding into pretzel knots, etc.
  9. Once water solution is at a rolling boil, carefully transfer 2 – 4 pretzels into the water. Let boil for about 30 seconds on each side.
  10. Transfer to lined baking sheets. Repeat for all pretzels.
  11. Bake until the pretzels reach desired level of golden-brown color, about 15 minutes.
