Enriched Dough (GF, V)


  • 1 cup milk – can be dairy-free
  • 1/3 cup white sugar
  • 1/3 cup butter or coconut oil
  • Pinch of salt
  • 2 eggs or 1/2 cup (120 ml) applesauce
  • 3 1/2 cup all-purpose flour – can be gluten free
  • 1 package or 2 1/4 active dry yeast


  1. In a medium-sized saucepan or pot, mix together the milk, sugar, and butter or coconut oil.
  2. Heat until the butter/coconut oil is melted, but not boiling.
  3. let cool until warm to touch so that you do not kill the yeast.
  4. Sprinkle the yeast over the warm milk mixture. Let sit for 10 minutes.
  5. In a large bowl, mix together 2 1/2 cups of the flour and the salt.
  6. Add the yeast mixture and egg or applesauce.
  7. Using a spoon or spatula, mix until combined.
  8. Try to mix in as much of the remaining 1 cup flour as you can.
  9. Turn out dough and knead for 3 – 5 minutes.
  10. Let rise for about 1 hour or until doubled in size.
  11. Punch dough down.
  12. Shape and bake as directed for specific filling.
