Bread Fillings

Dough recipe:

Fillings for:

Garlic knots (V, Gf)

Foccacia (V, Gf)

Calzones (Veg, Gf)

Cheezy Rolls


Special tools

  • Non-stick pan for rising
  • Non-stick pan or cast iron for baking
  • Optional stand mixer


  1. Prepare dough – recipe at
  2. Melt butter
  3. Add olive oil until butter is fully incorporated.
  4. Add salt, oregano, cheese, and egg yolk.
  5. Roll out dough to about a 1/2 inch thick.
  6. Spread filling on dough until fully covered.
  7. Roll up the dough into a log
  8. Pinch the seam to close.
  9. Cut the log into inch thick pieces.
  10. Place in a nonstick pan or cast iron pan.
  11. Let rise until puffy, about an hour.

Bake for 25 – 30 minutes at 350 degrees

Garlic knots – vegan


Special tools:

  • Pastry brush
  • Knife and cutting board


  1. Chop garlic into small pieces and coat in olive oil. This will be the topping for the knots.
  2. Break off little bits of dough and roll in tiny bits of flour into a long roll.
  3. Tie the dough into a knot. Repeat until there is no dough left.
  4. Oil the bottom of the baking pan and then place knots on the pan. Make sure there is space between the knots to rise.
  5. Use the pastry brush to oil the tops of the knots with the garlic oil you prepared earlier.

Bake for 12-15 minutes at 350 degrees

Foccacia – vegan


Special tools:

  • Large baking sheet


  1. Before baking bread, flatten out to about 1 inch thick.
  2. Press herbs and spices into the loaf.

Bake at 350 for 10 – 15 minutes

Optional broiler for a minute to crisp-up edges



Special tools:

  • Large bowl
  • Large baking sheet
  • Rolling pin


  1. In a large bowl, mix together ricotta cheese, eggs, seasonings of choice, mozzarella cheese, parmesan cheese, and spinach.
  2. Roll out dough to about 3/4 inch thick.
  3. Spoon spinach mixture onto dough. Spread around on dough leaving 1 inch of room with no filling.
  4. Fold dough over in half to create a half-circle shape.
  5. Seal edges with a fork.

Bake at 400 for 30 – 35 minutes
