Cheezy Rolls – vegetarian
Ingredients:

- 2T olive oil
- Salt
- 4 T melted butter
- Oregano
- 1/2 cup cheese
- 1 egg yolk
Special tools
- Non-stick pan for rising
- Non-stick pan or cast iron for baking
- Optional stand mixer
Steps
- Prepare dough until step 9 – recipe at https://pandabaker.com/2020/04/15/bread/
- Melt butter
- Add olive oil, salt, oregano, cheese, and egg yolk. Mix until incorporated.
- Roll out dough to about a 1/2 inch thick.
- Spread filling on dough until fully covered.
- Roll up the dough into a log
- Pinch the seam to close.
- Cut the log into inch thick pieces.
- Place in a nonstick pan or cast iron pan.
- Let rise until puffy, about 30 min.
Bake for 25 – 30 minutes at 350 degrees
Garlic knots – vegan, gluten free
Ingridients:

- 1/2 cup oil
- Garlic
Special tools:
- Pastry brush
- Knife and cutting board
Steps:
- Prepare dough as directed through step 8. Instructions here
- Chop garlic into small pieces and coat in olive oil. This will be the topping for the knots. Set aside until knots are formed.
- Break off little bits of dough and roll into a log, about 2 cm thick.
- Tie the dough into a knot. Repeat until there is no dough left.
- Oil the bottom of the baking pan and place knots on the pan. Make sure there is space between the knots to rise.
- Use the pastry brush to oil the tops of the knots with the garlic oil you prepared earlier.
Bake for 12-15 minutes at 350 degrees
Foccacia – vegan, gluten free
Ingredients:

- Garlic, sea salt, rosemary, other fresh herbs
- Olive oil
Special tools:
- Large baking sheet
Steps:
- Prepare dough as directed here until step 9.
- Before baking bread, flatten out to about 1 inch thick.
- Press herbs and spices into dough and brush olive oil on top.
Bake at 350 for 10 – 15 minutes
Optional broiler for a minute to crisp-up edges
Calzones – vegetarian
Ingredients:

- 15 oz ricotta cheese
- 2 eggs
- Seasoning
- 2 cups mozzarella cheese
- 3/4 cup parmesan cheese
- 10 oz spinach
- Salt + pepper
Special tools:
- Large bowl
- Large baking sheet
- Rolling pin
Steps:
- In a large bowl, mix together ricotta cheese, eggs, seasonings of choice, mozzarella cheese, parmesan cheese, and spinach.
- Roll out dough to about 3/4 inch thick.
- Spoon spinach mixture onto dough. Spread around on dough leaving 1 inch of room with no filling.
- Fold dough over in half to create a half-circle shape.
- Seal edges with a fork.
Bake at 400 for 30 – 35 minutes
